"88th Night" Hachiju Hachiya Shincha First Flush (2024)
Shincha (1st flush) is harvested 88 nights after the Japanese Lunar New Year. Counting starts from the first day of Spring and harvesting happen around May 2nd. 8 is a lucky number in Asia and it takes exactly 88 nights for the buds to bloom completely for the harvest.
Hand-picked, and skillfully processed by tea masters using some seriously old ancestral methods, this precious green tea is as fresh as it gets having come directly from Japan to us (on a boat.)
Also known as Hachijyu-Hachiya, it is a 100% Okumidori cultivar (meaning "Deep Green"). The cherry blossom scent and deep rich umami notes are distinct this year. There’s is a natural sweetness that hangs around on the palate that is just a dang delight!
Brewing directions all over the web saying to steep this tea for 2 minutes. Nope. We follow the advice from the family we’ve worked with and have known for 14 years and they say: 30-60 seconds. 2 minutes for green tea is an over generalized instruction for green tea. Not all green teas should be lumped into that prevailing mainstream thought.
It is said that tea picked on “hachi-jyu-hachiya” is the highest quality and that one will be in good health for one year if they drink it.
Keep sealed and store in a cool, dry, dark place (not the freezer or fridge). Best consumed within a month after opening.
